(Mom would always make this for me. She knew it was one of my favorites.)
Poppy Seed Salad Dressing (homemade)
2/3 cup of vegetable oil
1/4 cup of vinegar
1 tablespoon poppy seeds
1 teaspoon Grey Poupon Mustard
1/2 cup of sugar
1 teaspoon salt
Combine in a jar and shake ( I use a stick blender to achieve a better blend)
Refrigerate for a couple of hours
Shake well before serving……
Great over Romaine lettuce with thinly sliced red onions and a few slices of Mandarin oranges.
ZUCCHINI CASSEROLE
( From my dear lifelong friend Jim whom lives with his wife Martha in O’Fallon, Illinois )
1 qt. zucchini, sliced (about silver dollar thick)
1 pound ground beef
1 medium onion–diced
1 clove garlic (more to taste) crushed
1 teaspoon salt
1 teaspoon basi1 teaspoon l (more to taste)
½ teaspoon oregano (more to taste)
¼ teaspoon pepper
2 cups cooked rice
1 can tomato sauce (8 ounces)
1 cup cottage cheese
1 egg beaten
1 cup grated cheddar cheese (more to taste)
Cook zucchini in salted water for about 2-3 minuets—-DRAIN WELL
Saute ground beef, onion, garlic, all seasonings until done and no pink remains in beef
Stir in cooked rice & tomato sauce—set aside
Blend cottage cheese and beaten egg
Arrange ½ zucchini in casserole—spoon on meat & rice mixture
Spread cottage cheese and egg mixture on top of meat & rice mixture evenly
Tope with balance of zucchini & top with grated cheddar cheese
Bake 350 for 20-25 mins. or until bubbly. Let stand 5 mins.—serve and enjoy

ZUCCHIN PIE
(tastes like apple pie)
4 cups slices zucchini (to look like apple slices for pie)
2 tablespoon lemon juice
1 cup sugar
½ teaspoon cinnamon
¼ teaspoon salt
3 tablespoons flour
Toss all with zucchini
Bake at 400 for 30-40 mins.
SERVE & ENJOY
The last posting about this little beach house out on Isla Blanca generated a lot of interest. We returned to it for a day at it’s beach and took some more pictures and videos of the beach an inside the house. Here they are…….

The Caribbean Sea on Isla Blanca………

At one time this must have been quite the complex with buildings down by the beach and the beach house further back on the property. What’s left of this structure even had electricity at one time……..

We drove our car right down onto the beach and hoped that we could get back over the dunes to go home. We did, thanks to 4 wheel drive…….
